How do you feel about salads? As it turns out, many people have big feelings surrounding a crisp bed of greens, and I think we have diet culture to blame for that. Poor salad was just sitting around minding its own business, and the industry decided to make it the poster child for quick-fix fads that leave you unsatisfied and crying over the menu at your favorite restaurant.
However, salad isn’t the flavorless, soul-sucking monster that dieting makes it out to be, at least not when you do it right. I firmly believe that a salad is a perfect opportunity to create a meal that’s nutrient-dense and bursting with flavor. If you spend a little extra time seasoning the protein and cooking it to your preferred temperature, the juices act as the perfect flavor enhancement. I love to use my air fryer for this recipe because it’s quick, effective, and doesn’t dry out the meat.
The Ruby Geode Salad is my personal take on a burger salad. The dates provide the perfect touch of sweetness while the pistachios bring the crunch and the soft cheese melts in your mouth. Feel free to modify this baby to your liking, using whatever nuts or cheese sounds tasty to you. Pair this meal with the song “Cosmic Cave” by Ex Hex, and it’s a whole mood that will have your tastebuds dancing.
Ruby Geode Salad
Ingredients
2-3 handfuls of arugula
4 pitted and shredded dates
A palmful of pomegranate arils
A palmful of pistachios
1 oz. soft goat or cow’s milk cheese
4-6 ounce of lamb (or beef)
Directions
Season the lamb (or beef) to your liking and air fry until done
Shred the dates, either with a knife or by hand
Place the arugula in a bowl and add dates, pomegranate arils, pistachios, and soft cheese
Toss and place the cooked lamb on top
Play “Cosmic Cave” by Ex Hex and let the party begin
